Last night I experimented and made calzones- a twist on the classic pizza. I included a list of our fillings but you can be creative there.
The fillings:
thinly sliced green peppers
chopped olives
mozerella cheese
deli ham cut in strips
pepperoni
The sauce:
15 oz. tomato sauce
6 oz. tomato paste
generous pinch of:
sugar, oregano, pepper, salt
a drizzle of olive oil
Simmer over low heat for about 20 minutes
The dough:
Proof the following for 15 minutes
1 1/2 Tablespoons yeast
1 1/2 Cups warm water
1 Tablespoon honey
Then add 3 Tablespoons olive oil (do not stir, just pour in)
Sift the following
4 1/2 cups flour (3 white 1.5 cups whole wheat if you want wheat- also increase honey to 2 Ts)
1 Tablespoon salt
1 Tablespoon sugar
Slowly add the proofed yeast mix to the dry mix (We used our stand mixer) and mix until the edges of the bowl come clean. It will be a sticky dough. Oil a large bowl, cover dough with a towel and let rise about 1 hour. Punch down, make about 8 balls (small orange size) and let those rise covered on a greased cookie sheet or two for 40 minutes.
Roll balls into circles and fill with cheese and sauce and extra desired toppings- leave the edges without toppings. Fold the dough over to make a 1/2 moon shape and crimp the edges with a fork to seal.
Cook at about 350 for 20 minutes or until golden.
Brush with melted butter and parmesian cheese (optional)
We served with chicken caesar salad and had way too much food- this recipe (with a side salad)would probably feed about 6-8 adults or an army of children. I experimented with this so I kept adding things until it was perfect. We had left over sauce as well but we used it as a dip for the calzones.
